Here’s my ongoing list of what we’ve managed to put away this year. I look at this when I feel like I’ve done a lot and realize how much further I should have gone.:
Frozen:
- 10 pints of corn kernels
- 28 ears of corn
- 1 gallon of “chowder corn” (mushed up bits and corn milk…mmmm)
- 6 Quarts of green beans
- 1 Quart mystery shell beans (Actually, I think they are Tongue of Fire)
- 4 pounds of Eggplant (2 baked, 2 breaded and baked)
- 3 Quarts of Cauliflower
- 3 Quarts of Broccoli
- 2 pints of tomato sauce
- 14 Pounds of whole tomatoes that I hope to turn into sauce once I stop hating the sight of tomatoes
- 4 Pints of apple butter
- 7 Quarts of peaches
- 1/2 pint of blueberries
- Various and Sundry summer squashes and zucchinis
Canned:
- 4 quarts, 1 pint dill pickles
- 2 pints dill beans
- 4 Half-Pints of fig preserves (from my parent’s fig tree in Alabama)
- 6 Quarts Crushed/Stewed Tomatoes
- 4 Pints tomato juice/bits
- 7 Pints green beans
Planned
- A crap-load of canned tomatoes
- More beans, if I can find them
- Applesauce
- Apple Butter
- Broccoli
- Cauliflower
- Carrots
